How do you brew beer in the mountains?

Monsteiner is the highest-altitude brewery in Europe – which comes with a few unique challenges. One big one: the higher the altitude, the lower the boiling point. What does that mean, exactly? At 1,600 metres above sea level, water boils at 93°C instead of 100°C. However, 93°C isn’t hot enough to bring out all the flavours in our hops.
